You wanted my take on an Italian Sub? You got it! If you love 🇮🇹 Italian subs 🇮🇹, but you’re in the soft food phase after bariatric surgery, try my recipe for a simple high protein chopped Italian chicken salad. (Honestly, this might be one of my best recipes yet. I can’t believe how good it turned out!) Ingredients: 2 shredded chicken breasts 🐔 16 oz cottage cheese ¼ cup olives 🫒 ¼ cup pepperoncini ½ cup red onion 🧅 ½ cup tomatoes 🍅 ½ cup mozzarella cheese 🧀 ½ cup provolone cheese 2 oz salami 2 oz pepperoni 2 tbsp lemon juice 🍋 3 tbsp red wine vinegar 1 tsp mustard 1 tbsp garlic 🧄 1 tbsp oregano 🌿 Salt and pepper to taste 🧂 In your food processor, add the mozzarella, provolone, pepperoni, red onion, tomatoes, olives, and pepperoncini. Pulse to chop into small diced pieces. Put this mixture into a bowl and set aside. In the food processor, add cottage cheese, red wine vinegar, garlic, mustard, lemon juice, oregano, and salt and pepper to taste. Blend until smooth. In a large bowl, add your shredded chicken, then add the Italian mixture and the cottage cheese mixture. Mix until well combined. And that’s it!
